Strawberry Bliss Balls
Serves: 25 bite size balls
  • 75g cashews (1/2 cup), soaked for 3 hours
  • 100g desiccated coconut (1 cup)
  • 100g medjool dates (3/4 cup), about 6 dates, pitted
  • 2 tbsp freeze dried strawberry powder
  • 1 tbsp coconut oil
  • ½ lemon, juice
  1. Soak the cashews for 3 hours in some water, rinse and drain well.
  2. Place all of the ingredients into a food processor and blend until the mixture comes together.
  3. Transfer the mixture into a bowl and roll into bite size balls using palm of your hands.
  4. Roll the balls in some extra strawberry powder.
  5. Transfer to an airtight container and place into a fridge for about an hour to firm up.
  6. Store in a fridge for up to a week.
  7. Enjoy!
