Rainbow Salad

Ingredients
  • 1 beetroot dip
  • 1 medium carrot, peeled and grated
  • 1 apple, peeled and grated
  • 3 heeped tbsp of sauerkraut or finely sliced cabbage
  • 1 avocado, chopped into cubes
  • sea salt
  • black pepper
  • lemon juice
  • extra virgin olive oil
  • pumpkin seeds
  • parsley to garnish
Instructions
  1. First prepare your beetroot dip.
  2. Peel and grate the carrot.
  3. Peel, core and grate the apple.
  4. Chop the avocado.
  5. Finely slice the cabbage if using.
  6. Arrange everything on the plate.
  7. Season with salt and freshly ground pepper.
  8. Squeeze lemon juice over.
  9. Drizzle with good amount of olive oil.
  10. Top with pumpkin seeds and chopped fresh parsley.
  11. Enjoy!
